Collagen casings are made from reconstituted bovine collagen, a natural protein that provides consistent diameter, reliable machine performance, and a clean professional appearance on the finished product. They are ready to stuff in most formats, permeable to smoke and steam, and available in a wide range of calibers and colors.
We offer three categories of collagen casings to cover the full range of sausage types: edible casings for fresh sausages, processed and cooked sausages, and large caliber casings for both straight and curved products.
Edible collagen casings for fresh sausages are designed to remain on the product during cooking and consumption. They are stuffed directly from the box, no soaking or conditioning required. Ideal for grill or pan applications where a tender bite and attractive appearance matter.

Large caliber collagen casings are used for cooked and dry sausages in straight formats. These are non edible casings that are peeled from the finished product. They give sausages a traditionally appetising appearance and are available in a range of calibers for different product types.

💡 Maturing tip: For dry sausage products, we recommend gradually reducing temperature and humidity from approximately 22°C / 95% RH down to 18°C / 85% RH over 7–10 days at low air flow. After maturing, store at 16°C / 75–80% RH. The casing stays adhered throughout maturing and peels cleanly from the finished product.
Curved collagen casing is purpose built for ring and horseshoe shaped sausages. Like our large caliber straight casings, it is a non edible casing that peels cleanly from the finished product, but its pre formed curve makes it the natural choice for ring bologna, sujuk, and other ring shaped products that need to hold their shape through smoking, cooking, or drying.

The FDA announced on January 15, 2025 that it is revoking authorization for the use of FD&C Red No. 3 in food and ingested drugs, based on the Delaney Clause of the Federal Food, Drug, and Cosmetic Act. Food manufacturers using Red No. 3 have until January 15, 2027 to reformulate their products. See the official FDA notice for full details.
Two of our collagen casing colors, Carmine Mahogany and California Redwood, are colored using natural dyes rather than Red No. 3. If you are looking to move away from Red No. 3 ahead of the deadline, we are fully stocked in both colors and ready to help guide you through the change.
