About Spice Coated Casings

Spice coated casings are a fabric based casing pre coated on the inside surface with a layer of spices, herbs, or seasoning blends. As the product is stuffed and the casing fits tightly against the meat, the coating transfers evenly onto the surface, giving every piece the same crusted, seasoned exterior without any manual rubbing, rolling, or hand application.

This is the same coated casing concept used for products like peppered salami, garlic crusted summer sausage, and spicy gyros logs found in delis and specialty markets. The casing is removed after processing, leaving the spice crust on the finished product.

Stocked Varieties

We stock the following spice coated casings in 65mm diameter, 20-inch (50cm) pieces. Each piece will stuff approximately 3 lbs of product.

Gyros	Mediterranean style herb and spice seasoning, traditional gyros and döner-style log coating

💡 Custom sizes available. While Black Pepper, Pepper and Garlic, Diablo, and Gyros are stocked in 65mm x 20" pieces, other diameters, lengths, and spice blends can be ordered. Contact us to discuss your specific product and minimum order requirements.

Typical Applications

Peppered salami, garlic crusted summer sausage, spicy snack sticks, gyros and döner-style logs, dry cured and semi dry sausages, and any sliced deli product where a seasoned exterior crust adds to the presentation.

How to Use

Remove the casing from its packaging, no soaking required
Load onto the stuffing horn and fill tightly so the casing makes full contact with the product surface
Take care not to disturb or damage the spice coating during stuffing
Process (steam, smoke, or cook) according to your standard procedure for the product type
After cooling, remove the casing, the spice coating remains on the surface of the finished product
